On the corner of 37th & Woodland, which was once a vacant lot filled with trash and debris, is now a one-third acre demonstration garden where over 1,300 pounds of produce grew last year. This small plot of land is an important piece of a larger initiative that I work on almost every day. From my desk, I can get up, walk over to the window and take a look at what's growing in our garden. And, I never get tired of being amazed at what we've been able to grow.
The actual name is "Royal Burgundy Beans" and they are a beautiful, deep shade of purple.
Now, here's the fun part.
They turn green when you cook them.
They taste delicious!
Edited Update: Per my conversation with Mama (In the comment section) I wanted to share with you a picture of the blue potatoes I prepared for my family. The photo makes them look more purple in color than they actually are. They're really a sort of royal blue color. And you can't taste the difference between them and white potatoes.
